Description
A traditional Anatolian delicacy, the walnut-filled pestil (fruit leather) is produced in Gümüşhane using traditional methods. The pestil is made primarily from mulberries grown along the Harşit Valley and the streams that feed into it. The use of crystal-clear mountain water, honey, Gümüşhane mulberries, milk, sugar, flour, and aromatic Gümüşhane walnuts gives this pestil its unique character. All ingredients are combined to form a mixture called "herle." Once heated to a fluid consistency, the herle is spread onto cloths and sun-dried to reach its final form. While ready to eat as is, you can also soak the pestil overnight to create a syrup to drink, sauté it in oil and fry an egg over it, or roll it up with nuts inside as a wrap.
