Description
Yayla Bulgur for Pilaf (1 kg) is made from coarse-grained hard durum wheat, obtained by milling wheat that has been boiled and dried after the bran is removed. Varieties for pilaf, meatballs, and çiğ köfte have different milling textures, classified by grain size. Bulgur made from hard durum wheat with a fine ("ant-head") grind, produced in Konya, Şanlıurfa, Gaziantep, and Mardin, is particularly preferred. It is a staple food in Turkey. To store legumes for longer periods, keep them in a cool, dry, and well-ventilated area. Storing dry legumes in cloth bags is recommended. Heat and humidity cause spoilage and insect infestation. Optimal storage conditions are a temperature of 5–10°C and a relative humidity of 50–60%.
