Description
Tarhana, believed to have been brought from Central Asia to Anatolia by nomadic Turks, is prepared in Kahramanmaraş using unique local methods. The tradition of neighborhood women gathering early in the morning to spread tarhana in a collaborative effort is a fading part of the city's cultural fabric. To produce tarhana chips, wheat is first crushed in stone mills to remove the husk and turned into cracked wheat (yarma). This wheat is then washed, cooked, and mixed with village yogurt, mountain thyme, and the region's famous chili flakes. The mixture is fermented overnight, spread thinly like dough on drying mats to sun-dry, and finally baked until ready for consumption. This snack, featuring yogurt, thyme, and chili, can be enjoyed on its own or paired with various nuts, just as it is traditionally consumed in the region.
