Description
Thought to have been brought from Central Asia to Anatolia by nomadic Turks, tarhana is prepared in Kahramanmaraş using a distinct, region-specific method. The tradition of neighborhood women gathering early in the morning to spread tarhana in a communal effort (imece) is slowly fading from the city's cultural fabric. To make tarhana chips, wheat is first pounded in a stone mill to remove the husk, turning it into cracked wheat (yarma or dövme). This wheat is then washed and cooked. Village yogurt is added to the cooked wheat, and it is seasoned with mountain thyme. The mixture is left to ferment overnight, then spread thinly like a phyllo dough onto mats to dry in the sun. You can enjoy this snack, which is rich in yogurt and thyme, on its own just as they do in the region, or paired with other varieties of nuts.
