Description
The grapes grown in the Çoruh Valley in Artvin, which is rich in biodiversity, stand out with their distinct taste stemming from the region's climate and their thin skins. After being gathered, the grapes are boiled in large cauldrons, crushed, and their juice is separated from the pulp. While the resulting grape juice is boiling, a mixture prepared separately by combining wheat flour, honey, and milk is slowly poured into it, and the mixture is stirred with paddles until it reaches a consistency thicker than boza. This resulting mixture, known as helme, is spread in a thin layer onto cheesecloths and left to dry in an airy place under the sun. You can consume Yusufeli Grape Pestil (fruit leather) as a snack at any time of the day, or use it as a substitute for sugar alongside your tea.
