Anadolunun geleneksel lezzetlerinden biri olan pestilin fındıklı çeşidi, geleneksel yöntemlerle Gümüşhanede üretiliyor. Pestiller, Harşit Vadisi başta olmak üzere, bu vadiye bağlanan akarsuların kenarlarında yetişen dut ağaçlarının meyvesinden yapılıyor. Dağlardan süzülen tertemiz su, bal, Gümüşhane dutu, süt, şeker, un ve çeşni olarak da fındığının kullanılması bu pestili kendine has kılıyor. Bütün malzemeler herle adı verilen karışımı oluşturuyor. Sıcak ve akışkan hale getirilen herle, bezlere serilerek güneşte kurutuluyor ve son halini alıyor. Bu haliyle de tüketime hazır olan pestili aynı zamanda bir gece önceden ıslatıp şurup haline getirip içebilir, yağda kavurup üzerine yumurta kırarak hazırlayabilir veya içerisine kuruyemiş koyarak dürüm şeklinde de tüketebilirsiniz.
